I'm going on three months of unemployment now and I'm not going to lie it is sucky and boring.
I have always hated being by myself for extended periods of time...I can appreciate the quiet moments of reflection as long as they don't last for more than a few hours. So I would like to thank my gchat friends and my in-person friends for being extra attentive as of late.
I would also like to thank my parents for letting me hang out at their house and talk their ears off most afternoons and a few evenings week after week.
Back to the part about how I'm easily entertained...
A few months ago I bought seven little baby pie pans at a store in Park City. I wanted eight but they only had seven. Sometimes we just have to settle. They've been rolling around in my trunk since then, but I finally dug them out for Father's Day.
One day, while I was driving around town, listening to them bang on the sides of my trunk like little prisoners, I had a baking vision. Build your own pie. "If you build it he will come."
For the Father's Day test run, we had chocolate and banana cream pudding, bananas, strawberries, chocolate chips, baby marshmallows, and cool whip. Who knows what wild and crazy fillings/toppings I will come up with next time. I made the crust from scratch. Pie crusts are my forte. I am really good with a pastry cutter. I could make pies every day and still think it was the funnest thing ever. We put all the toppings out like a salad bar, only a pie bar, and we built our own pies. See:
Since that was such a huge success, I decided to make something a little more challenging in my baby pans. Fruit tarts. I'd never made a tart before but I took them to Sunday dinner at Grandma B's. I've heard that you should always try a new recipe out before you serve it to other people. I'm too brave for that childish behavior. And they are my family and they have to love me no matter what.
Other things that have been keeping me entertained recently:
Dallin and Melissa came to visit (post on that coming soon)
Golf lessons and searching for CUTE golf shoes
Watching the duck take it's morning bath in my swimming pool
Finding spelling and grammatical errors in job descriptions
People watching at the Downtown Farmers Market
SYTYCD and The Bachelorette...I really want to rip into Wes right now, but it's not the right time or place so I will hold my tongue until the end of the season.

Don't forget going on a girl's night with Matt, Brit, and me to see 17 again!
Yeah. How could you forget about that (referring to Megan's comment). Okay, I totally hear ya about the Bachelorette. I hate Wes. I know he's a goner soon, but really... she's kept him WAAAAY too long. Whatev. And I totally called it that Ed would come back. Okay, off my bachelorette soap box. You should come talk my ear off in the afternoon when your parents get sick of you. Which they won't b/c, like you said, they're family and they have to love you. But come over anyway. I'll even let you make me a pie and/or fruit tart (I had no idea about that little talent of yours!!)
those look yummies!!!
you are genius.
love the pies! Maybe you should open a bakery and call it Mmmmbop's.
p.s. Bret and I are very into golf this summer. Perhaps we should hit the links sometime (I don't know what that means but B tells me it's golf related).
your pies are beautiful!!!
I want to eat them
